Agoumastos
Introduction
Agoumastos is an extremely rare and almost forgotten red variety from Macedonia, which is the subject of research and revival by visionary winemakers. Its name, which suggests something that 'no one has easily tasted,' underscores its rarity and its position as one of the hidden treasures of Greek biodiversity.
Tasting Notes
Color: Deep ruby with violet highlights. Aromas: Dominated by dark forest fruits (blackberries, blueberries), along with notes of herbs, wild mint, and sometimes an earthy sensation reminiscent of wet soil. Palate: Robust, with noticeable tannins and an acidity that gives it vibrancy. The finish is usually long, leaving a slightly spicy sensation.
Gastronomy
Traditional Meats: Oven-baked lamb with potatoes, stewed goat or Smyrna-style meatballs. Game: Hare stew or wild boar with plum sauce. Aged Cheeses: Matured kasseri or a strong Cretan graviera.
Terroir
The variety is mainly found in the region of Halkidiki and Thessaloniki. It prefers medium-textured, clay soils with good drainage, where the vine can develop its distinctive phenolic character without excessive yield. The climate of Northern Greece, with the influence of the sea breeze from the Aegean and the cool winds from the mountainous areas, allows Agoumastos to ripen smoothly. It is a variety that seems to respond well to temperature fluctuations, maintaining an interesting acidity.
