Zalovitiko
Introduction
Zalovitiko is an extremely rare red variety from Epirus, which is part of the valuable viticultural heritage of the Ioannina region. It is a variety that for years was overshadowed by the more well-known grapes of Epirus (such as Vlachiko and Bekari), but today it is recognized as one of the 'links' connecting the modern vineyard with the historical tradition of the area.
Tasting Notes
Color: Bright ruby, medium intensity. Aromas: A fresh palette of red forest fruits (wild cherry, raspberry), herbal notes, and a subtle spicy sensation (white pepper). Palate: Light to medium body, with 'lively' acidity and very fine tannins. The aftertaste is clean and leaves a sense of mountain freshness.
Gastronomy
Epirotic Pies: Traditional pies with meat or cheese and greens. Light Meats: Poultry, rabbit, or lamb baked with simple herbs. Cold Cuts: Pairs excellently with platters of local cold cuts and semi-hard cheeses.
Terroir
Region: Its natural home is Ioannina, specifically the viticultural zone of Zitsa and the surrounding mountain villages. Terroir: As a true mountain variety, Zalovitiko thrives at high altitudes and on limestone, sloping soils. Epirus, with its cold winters and cool summers, allows the variety to ripen slowly, maintaining its freshness. Result: It produces wines with an elegant structure, intense acidity, and lower alcohol content compared to the reds of the south, reminiscent of the standards of Central European wines.
