Akominato
Introduction
Akominato is one of the lesser-known yet highly promising varieties of the Cretan vineyard. Although it was used for years mainly in blends to provide color and structure, it has recently begun to attract the interest of winemakers as a single-varietal wine, highlighting the unique character of mountainous Rethymno.
Tasting Notes
Color: Deep purple with violet highlights. Aromas: Dominated by dark forest fruits (blackberry, blueberry), with herbal notes and, when aged, hints of leather and sweet spices. Palate: Rich body with noticeable but well-integrated tannins and a characteristic acidity that gives it vibrancy.
Gastronomy
Akominato demands dishes with intensity and earthy elements: Cretan Cuisine: Ideal for 'antikristo' lamb or boiled goat. Game: Wild boar or hare stew. Aged Cheeses: Aged Cretan graviera or kefalotyri.
Terroir
Terroir: Cultivated in rocky, limestone soils on the semi-mountainous slopes of Kefalonia, offering natural drainage. Climate: The Ionian climate is humid, but the altitude and sea breezes protect the variety, providing balanced ripening.
