Dermatas
Introduction
Dermatas is an extremely rare white variety from Crete, which for decades was on the brink of extinction. It is one of the most recent "bets" of Cretan winemakers (mainly in Rethymno), who are seeking in old vineyards the keys to renewing the local identity.
Tasting Notes
Color: Pale golden yellow with golden highlights. Aromas: Notes of ripe citrus, pear, as well as more complex elements like toasted bread, white flowers, and dried herbs. Palate: Full, oily, and elegant. Its acidity is medium to low, but its structure allows it to stand alongside rich dishes.
Gastronomy
Rich White Meats: Chicken with cream, lemon rabbit, or even kokoretsi. Traditional Cuisine: Cretan pies (sfakianes or agniopites), snails boubouristi, and mushroom risotto. Fatty Fish: Grilled sardines or baked fish with herbs.
Terroir
Region: The main focus of Dermatas is found in the prefecture of Rethymno, in areas like Efentis, where vines over a hundred years old have been preserved. Terroir: Thrives in sloping, sandy-clay soils at moderate altitudes. Its ability to survive in old, own-rooted vineyards demonstrates its remarkable adaptability to the Cretan soil.
