Karystino
Introduction
Karystino (or Karystiano) is a rare red variety that serves as the oenological emblem of Southern Evia, specifically the region of Karystos. It is a survivor variety that connects the modern vineyard with the historical tradition of the 'Karystian Wines,' renowned since antiquity. This grape loves the sun and the strong winds of Cavo D'Oro.
Tasting Notes
Color: Medium intensity ruby with brick-red highlights. Aromas: An elegant composition of red fruits (cherry, strawberry), notes of dried flowers (rose), sweet spices, and a hint of tea or leather. Palate: Medium body with noticeable but 'polished' tannins and a characteristic acidity that adds vibrancy. The finish is long and slightly herbal.
Gastronomy
Local Products: Ideal for Karystos lamb or goat in the oven. Pasta: Traditional kourkoubines (handmade pasta from Karystos) with red sauce and grated kefalotyri cheese. Cheese Platter: Pairs excellently with local cheeses such as Karystos tulumotyri.
Terroir
Region: Its natural habitat is Karystos and the slopes of Ochi. It is found almost exclusively in Southern Evia. Terroir: Thrives in schist and rocky soils. The variety is perfectly adapted to the 'meltemia' and the strong northern winds of the area, which act as natural protection against diseases. Result: Produces wines with a distinct structure and a character that balances between Mediterranean warmth and the sea breeze.
