Stavrochiotiko
Introduction
Stavrochiotiko (or Stavrochiotis) is one of the rarest and most historic red varieties of the Aegean. Its name reveals its origin from Chios, and this grape is a valuable part of island viticulture, aromatically and genetically linking the islands of the Eastern Aegean with the Cyclades.
Tasting Notes
Although single-varietal vinifications are minimal, its aromatic identity is characterized by: Fruit: Dominated by red fruits such as cherry and strawberry. Herbaceousness: Often exhibits subtle herbal notes that add freshness. Structure: It has a medium body and moderate tannins, making it a balanced and 'island' red, without the aggressiveness of high tannins.
Terroir
Chios: As its name suggests, Chios is its historical and geographical origin. It is included in the permitted varieties of the viticultural district of the Eastern Aegean Islands. Cyclades: It is sporadically found in Serifos, which supports the theory of historical movement of plant material between the Aegean islands. Status: It remains extremely rare, with plantings being limited and scattered, mainly in old, traditional vineyards.
