Tsapournakos
Introduction
Tsapournakos is a distinctive and rare red variety cultivated almost exclusively in the region of Velventos, Kozani. For years, it was an oenological mini-mystery until genetic identification revealed that it is the same genetic type as the French Cabernet Franc. However, decades of acclimatization to the microclimate of Lake Polyphytos have endowed it with its own unique character.
Tasting Notes
- Color: Deep ruby with purple highlights that persist even after years of aging. - Aromas: An explosive bouquet of red fruits (cherry, strawberry), framed by the emblematic notes of green pepper, tomato leaves, ink, and, after barrel aging, sweet spices and vanilla. - Palate: Medium to full-bodied with velvety tannins and a refreshing acidity that gives it vibrancy. The finish is long, leaving a sense of freshness and herbaceousness.
Gastronomy
- Meats: Ideal for grilled lamb, beef fillet with pepper sauce, and game (feathered). - Herb Dishes: Dishes containing rosemary, thyme, or sage highlight its herbaceous character. - Cheeses: Pairs wonderfully with aged yellow cheeses or even a platter of cured meats.
Terroir
- Terroir: The region of Velventos, protected by the Pieria Mountains and influenced by the beneficial humidity of Lake Polyphytos, offers the ideal environment for the slow ripening of Tsapournakos. - Climate: Cool nights help maintain acidity, which is key to the finesse of the variety. - Aging: It can be aged in oak barrels (usually 12 months), which adds volume and complexity without overshadowing the fruit.
