Vaftra
Introduction
Vaftra belongs to the so-called "coloring" varieties, as both the flesh and skin of its grapes have a high concentration of anthocyanins (pigments). Although it was the "unsung hero" in blends for decades, today winemakers use it to create single-varietal wines with intensity and character.
Tasting Notes
Appearance: Deep purple, almost black color. Aromas: Dominated by black fruits (berry, black cherry) and herbal notes, while barrel aging reveals aromas of chocolate and tobacco. Palate: Full-bodied, with intense tannins that soften with aging, and a long finish.
Gastronomy
Due to its strength and color, Vaftra pairs ideally with "rich" dishes: Grilled Meats: A well-cooked ribeye or ribs. Spicy Dishes: Game or meats with intense spice sauces. Aged Cheeses: Spicy yellow cheeses or ladotyri.
Terroir
Terroir: In the Cyclades, it prefers schist and sandy soils that drain well. Climate: Warm summer with local meltemia winds that prevent diseases despite the dense color of the grape. Result: Color concentration and robust tannins.
