The first OinoLabel Battle by OinoWay has officially come to an end, and the Instagram community has chosen the big winner: a wine that authentically captures Santorini, its volcanic landscape, and the power of traditional winemaking.
Behind the label lies a philosophy built on respect for the vineyard, natural winemaking practices, and the uniqueness of Santorini’s terroir.
A Wine Born from the Volcano
This wine is crafted from Assyrtiko and rare indigenous white grape varieties of Santorini, sourced from very old vines in the Akrotiri region. These vineyards grow in one of the world’s most distinctive terroirs — soils rich in volcanic ash, pumice stone, and basalt — giving the wine intense minerality, vibrant acidity, and a strong sense of character.
The powerful Aegean winds, known as the meltemia, act as a natural shield for the vines, significantly reducing the need for interventions and fungicides. Viticulture here remains almost untouched by modern intensive farming practices, preserving the authentic identity of the land.
Traditional Winemaking with a Natural Approach
Harvesting is done entirely by hand using overripe grapes, which are then left under the Santorini sun for three days to dry naturally. This process concentrates the fruit’s aromas and natural sugars, adding greater depth and complexity to the wine.
Fermentation takes place spontaneously inside old Santorinian clay vessels (afoura), without the use of commercial yeasts, following a more natural and authentic path. Every step of the production aims to express the place itself rather than alter it.
Even vineyard fertilization remains faithful to tradition, relying exclusively on pigeon manure — a practice deeply connected to Santorini’s agricultural heritage.
A Wine That Truly Expresses Its Island
The OinoWay Instagram community did not simply choose a beautiful label. They highlighted a wine with identity, history, and authenticity — a wine that carries the wind, ash, and spirit of Santorini in every glass.
