Assyrtiko
Introduction
Assyrtiko is the flagship of the Greek vineyard. Although it originates from the volcanic soil of Santorini, its success has led it across Greece and into vineyards abroad (e.g., Australia). It is a variety that perfectly expresses the 'terroir,' meaning the character of the place where it is cultivated.
Tasting Notes
Color: Straw yellow with bright highlights. Aromas: Citrus (lemon, grapefruit), white-fleshed fruits, and the typical 'mineral' sea breeze. Palate: Austere, full-bodied, with high intensity and a long, salty finish that captivates.
Gastronomy
Assyrtiko is the perfect companion for dishes with high fat content or intensity: Large Fish: Sea bream, sea bass, or red porgy grilled. Seafood: Oysters, clams, and lobster pasta. Rich Dishes: Oven-baked lamb with lemon or fried fish.
Terroir
Terroir: Volcanic soil (aspa), rich in pumice and minerals, but with minimal organic matter. Climate: Very dry, with strong winds. Vintners weave the vines into a basket shape (kouloura) for protection. Result: The characteristic minerality, high acidity, and salinity.
