Asprouda Kythnou
Introduction
Asprouda Kythnou is a rare white variety from the Cyclades that thrives in the arid and windswept environment of Kythnos (Thermia). It is a living part of the island's viticultural heritage, producing wines that reflect the austerity and minerality of the Aegean, while maintaining a particularly elegant character.
Tasting Notes
Color: Pale straw yellow with green highlights. Aromas: Subtle notes of white flowers, unripe citrus (lemon, grapefruit), and a strong sense of wet stone or iodine. Palate: Nervy and refreshing, with acidity taking center stage and a finish that leaves a slightly salty, mineral sensation.
Gastronomy
Fresh Seafood: Sea urchin salad, oysters, or grilled small fish (sardines, anchovies). Local Cheeses: Traditional "trimma" of Kythnos or fresh mizithra. Vegetables: Herb pies or fried zucchini.
Terroir
Cultivated on the traditional "pezoules" of Kythnos, in schist and rocky soils. The root system of the vines struggles to find moisture in the hard soil, leading to low yields but exceptional fruit quality. The climate is classic Cycladic: very dry, with intense sunshine and strong northern winds (meltemia). These winds protect the grapes from diseases, while the sea breeze imparts a subtle salinity to the fruit.
