Kouforrogo
Introduction
Kouforrogo is one of the rarest white varieties of the Aegean, a true "heirloom" of the Cycladic vineyard preserved thanks to the persistence of amateur and professional growers. It is found scattered in old vineyards of the Cyclades and is part of a broader effort to revive the "unknown" grapes of the Archipelago, offering an authentic taste of the islands' viticultural past.
Tasting Notes
Although its "typical" profile has not yet been systematically documented in the literature, the wines it contributes to are distinguished by their island freshness and crisp acidity. Color: White, with bright highlights that reveal the Cycladic sun.
Gastronomy
Ideally pairs with Mykonian kopanisti, fried sun-dried tomatoes, and fennel pies. Perfectly accompanies small fried fish or grilled octopus. Try it with arseniko Naxos or aged Cycladic graviera cheeses.
Terroir
Regions: Its presence is mainly noted in Mykonos, Tinos, and Naxos. As a genuine Cycladic grape, it is adapted to the challenging conditions of the Aegean: arid soils, intense sunshine, and strong northern winds (meltemia). It is usually found in traditional, mixed vineyards, co-cultivated with other rare varieties, maintaining the biodiversity of each island.
