Askathari
Introduction
Askathari is an extremely rare red variety from Lesvos, which is one of the most valuable wine links to the ancient past of the Aegean. It is a variety with a strong personality, closely connected to the history of the famous 'Lesvian Wine', which has been revived in recent years thanks to the persistence of producers who believed in the island's volcanic terroir.
Tasting Notes
Color: Bright ruby with violet highlights. Aromas: An elegant palette of red fruits (pomegranate, wild strawberry, cornelian cherry), floral notes (violet), and a very characteristic minerality reminiscent of flint. Palate: Lively and vibrant, with high acidity offering tremendous freshness. The tannins are fine-grained and well-integrated, leading to a long, saline finish.
Gastronomy
Local Cuisine: Sougania (Lesvos onion dolmades), stuffed lamb, and traditional seafood dishes cooked with tomato. Meats: Grilled fillets, beef carpaccio, or light game dishes. Cheeses: Ladotyri Mytilinis (the intensity of the cheese perfectly balances with the wine's acidity).
Terroir
Terroir: Its homeland is western Lesvos, an area with a strong volcanic character (also home to the Petrified Forest). The soils are poor, rocky, and rich in minerals, which limits the vigor of the vine and offers fruit with unique concentration. Climate: The climate is typically insular, with abundant sunshine and northern winds (meltemia) cooling the vineyards during the summer months. The lack of water forces the roots to reach great depths, enhancing the minerality of the produced wine.
