Dafnato
Introduction
Dafnato is an extremely rare white variety from Kefalonia, part of the unique oenological 'mosaic' of the Ionian Islands. Despite its name suggesting a connection to the Cretan Dafni, Dafnato is a completely different entity, closely linked to the tradition of Kefalonian 'village' wines and the biodiversity of the Ionian Islands.
Tasting Notes
Color: Light golden yellow with bright highlights. Aromas: Notable for notes of dried herbs, white flowers, and a subtle sense of ripe fruits (pear, quince). Palate: A wine with good structure, 'rounded' acidity, and a slightly spicy or herbal aftertaste.
Gastronomy
Local Flavors: Kefalonian cod pie or aliada (garlic dip). Poultry: Lemon chicken with thyme or roasted turkey. Vegetarian Dishes: Risotto with wild mushrooms or pies with fresh herbs and feta.
Terroir
Its natural habitat is Kefalonia, mainly in the old vineyards of the Paliki and Eleios regions. It prefers the island's limestone soils, which impart a distinctive minerality. Climate: Adapted to the high humidity and rainfall of the Ionian, Dafnato is a resilient variety that matures gradually under the Kefalonian sun.
