Katsano
Introduction
Katsano is a rare white grape variety from Santorini, covering less than 1% of the local vineyard and often found scattered among Assyrtiko or Aidani. It is a native variety highly adaptable to the volcanic soil, producing dry white wines with minerality and freshness, linked to the island's historical tradition since the 19th century.
Tasting Notes
Color: Pale lemon with faint green highlights. Aromas: White flowers, fresh fruits, citrus, and intense minerality. Palate: Medium body, oily, with balanced acidity and a long mineral finish.
Gastronomy
Local Products: Fresh fish or grilled octopus with Santorini olive oil. Pasta: Handmade island pasta with seafood and lemon. Cheese Platter: Soft cheeses like fresh anthotyro or Santorini graviera.
