Krasato
Introduction
Krasato is cultivated almost exclusively in Rapsani, on the southern slopes of Mount Olympus. Although it is rarely found as a single-varietal wine, its role is vital: it 'softens' the aggressiveness of Xinomavro and provides the necessary body and color, creating wines with great complexity.
Tasting Notes
Appearance: Deep red color with density. Aromas: Dominated by black fruits (plum, berry) and notes of nuts, while with aging, aromas of leather and sweet spices emerge. Palate: Full and robust, with noticeable tannins and moderate acidity, offering a long and warm finish.
Gastronomy
Krasato (and the blends of Rapsani) calls for 'strong' flavors: Game: Wild boar in a casserole or venison with red sauce. Meats: Ewe ribs or veal osso buco. Rich Cheeses: Aged kasseri or smoked cheeses.
Terroir
Terroir: Schist soils at the foothills of Mount Olympus, with excellent drainage. Climate: Influenced by the cool air currents descending from the mountain of the Gods, slowing down ripening. Result: Structure, body, and great aging potential.
