Mavrostyfo
Introduction
Mavrostyfo (or Mavrostyfo Argous) is one of the most dynamic and rare red varieties of the Peloponnese. As its name suggests ('black and astringent'), it is a grape with explosive phenolic potential, deep color, and robust structure. Although it remained a hidden treasure of the old vineyards of Argolis for years, today it is being revived through a few but iconic bottlings that rank it among the most 'masculine' and age-worthy varieties of Greece.
Tasting Notes
It possesses an exceptionally high tannic load and dense body. Its must is almost impenetrable, with a very deep, dark purple color.
Gastronomy
Due to its intensity and tannins, Mavrostyfo requires foods with corresponding 'weight': Dry: Game, wild boar, spicy stews, and aged yellow cheeses. Sweet: Desserts with dark chocolate, plum tarts, or intense blue cheeses (Roquefort).
Terroir
The variety is inextricably linked to Argos and the wider region of Argolis, while it is also found sporadically in Corinthia. It is officially recognized and its use is permitted in PGI Argolis and PGI Corinthia wines. At high altitudes (e.g., above 900 meters), the variety manages to maintain a refreshing acidity that balances the high alcohol content and concentration.
