Tsoumbrena Lefki (or Savvatiano)
Introduction
Tsoumbrena Lefki (or Aspri) is not a distinct, unknown variety, but one of the historical local synonyms of Savvatiano. It is the "queen" of the Attic vineyard and the most widely planted white variety in Greece, which in recent years has experienced an impressive qualitative renaissance, shedding the stigma of "ordinary wine."
Tasting Notes
Savvatiano/Tsoumbrena is distinguished by its subtle and elegant nose, which does not "tire": Fruit: Dominated by pear, green apple, and peach. Floral & Herbal notes: White flowers and a sense of freshly cut straw or herbs, especially in wines from old vines. Structure: It has medium to low acidity and a full, oily body that provides excellent balance on the palate.
Terroir
Attica: It is its ultimate stronghold. The old vineyards of Mesogeia (often with vines over 50-60 years old) today produce some of the most concentrated and complex white wines in the country. Central Greece: Significant presence in Boeotia and Euboea, while it is cultivated almost throughout mainland Greece. PGI Retsina of Attica: It is the main variety for the production of Retsina, which is now vinified with modern methods, highlighting its quality character.
