Vassaltis Vineyards – A Modern Take on Assyrtiko
Estate
The winery is located in Vourvoulos, on the eastern side of Santorini, overlooking the Aegean. The idea was initiated by Yiannis Valambous, who returned from the financial sector in London to revive the family land. The winery was completed in 2016 and has since evolved into a landmark of the island.
Vineyards
5 stremmas of privately owned vineyards + approximately 50 stremmas of partnerships. Indigenous varieties: Assyrtiko, Aidani, Athiri (white), Mavrotragano, Mandilaria (red). Organic cultivation and low-intervention philosophy. The name "Vassaltis" (basalt) symbolizes the volcanic soil and the minerality that characterizes the wines. Santorini – 100% Assyrtiko, fermentation & maturation on fine lees for 7 months; classic expression of the terroir. Gramina – single-vineyard Assyrtiko from Vourvoulos, maturation 12 months on lees; complexity, depth, and minerality. Other labels: Plethora, Aidani, Alcyone, Vassanos, Mavrotragano, Vinsanto, as well as an emerging PetNat from Attica vineyards.

The winery stands out for wine tourism with experiences that combine wine and gastronomy: Wine Tasting (4 wines + 4 pairings) – €40/person, Cellar Tour + Tasting – €30/person, Lunch to Share (3 dishes + 3 wines) – €55/person, Whole Experience (tour + 4 dishes + 4 wines) – €90/person, Dinner Degustation – 5 dishes, with pairing options (€35–55). Operates April–October, 11:00–20:00.
