Mavrotragano
Introduction
Mavrotragano is the "red giant" of the Cyclades, a variety that emerged from obscurity and the brink of extinction in the late 20th century to become one of Greece's most sought-after premium red wines. Its name, a combination of the words "black" and "crunchy," ideally describes its small, dark-colored berries with thick skins. Today, Mavrotragano is considered Santorini's answer to the great red wines of the world, offering a unique mineral dimension that only volcanic soil can impart.
Tasting Notes
Wines from Mavrotragano are rich, dark, and multidimensional. Color: Deep ruby, almost impenetrable. Aromas: An explosive nose of ripe red and black fruits (sour cherry, berry), framed by licorice, smoke, coffee, and a pronounced minerality (ash, metal). Palate: Full-bodied, with strong yet well-integrated tannins and acidity that adds vibrancy. Alcohol typically ranges from 13.5% to 14.5%. Aging: It is among the Greek reds with the greatest longevity, evolving beautifully for 10 to 15 years.
Gastronomy
Pairings: Game, Wagyu steak, aged cheeses, rich stews.
Terroir
Origin: An ancient variety from Santorini, which for centuries was mainly used to enhance the color and aroma of the traditional sweet Vinsanto. Today: Although it covers only 2% of Santorini's vineyard, its reputation has crossed Greek borders, with French wine enthusiasts showing a particular fondness for its "wild" character. Mavrotragano is a variety that requires patience and manual labor: Uneven Ripening: On the same bunch, unripe and overripe berries can coexist, necessitating exhaustive sorting during harvest. Low Yields: Production is naturally limited (~250 kg/stremma), contributing to the immense concentration of the must. Basket Training: In Santorini, it is cultivated using the traditional "basket" system for wind protection, while outside the island, it adapts to linear vineyards.
