Fokiano Mavro
Introduction
Fokiano Mavro is one of the most ancient and historical red varieties of the Aegean, closely linked to Ikaria and the Dodecanese. It is a variety with a strong character and great resilience, producing wines with a distinct personality, reflecting the wild beauty of our islands.
Tasting Notes
Color: Deep ruby with purple highlights. Aromas: A rich palette of red fruits (cherry, sour cherry), dried figs, herbs, and hints of spices. Palate: Robust and warm, with noticeable but well-integrated tannins and a finish that leaves notes of sweet spices.
Gastronomy
Traditional Stews: Goat in the oven, braised meats with thick pasta. Game: Dishes with wild boar or hare. Cheeses: Aged kefalograviera and spicy island cheeses (e.g., kopanisti).
Terroir
Terroir: In Ikaria, Fokiano roots in poor, granitic, and schist soils, often on steep terraces. The lack of organic matter forces the vine to struggle, thus offering fruit with great concentration. Climate: The environment is purely insular, with strong sea winds and abundant sunshine. The sea salt carried by the meltemi affects the vineyards, while the cool Aegean nights allow the grape to maintain its acidity despite the high daytime temperatures. Result: Wines with medium to full body, high alcohol, and a characteristic minerality reminiscent of the island's soil.
