Negoska
Introduction
Its name derives from the old name of Naoussa (Negus), but its heart beats exclusively in Kilkis. It is an essential component for the PDO Goumenissa wine, where legislation requires its participation at a minimum of 20% alongside Xinomavro, in order to 'tame' its high acidity and tannins.
Tasting Notes
Color: Deep ruby, much more intense than Xinomavro. Aromas: Dominated by black fruits (berry, black cherry) and plum, with notes of chocolate and cinnamon. Palate: Full and soft, with less aggressive tannins and a sweet fruit aftertaste.
Gastronomy
Game: Wild boar or roe deer in a casserole. Red Meats: Beef with plums or rich stews. Cheese Platter: Aged yellow cheeses and spiced charcuterie.
Terroir
Cultivated on the eastern slopes of Mount Paiko, in clay and medium-textured soils, often with high calcium content. The climate is continental with mild winters and warm summers, but influenced by the breeze of the Axios River. The protection provided by Paiko from the northern winds allows Negoska to ripen smoothly, achieving high sugar levels and lower acidity compared to Xinomavro.
