Thymiopoulos Vineyards
Intro
Thymiopoulos Winery is located in Trilofos, Imathia, at the foothills of Mount Vermio, and has been consistently active since 2003, with the first bottling of 'Earth and Sky' in 2005. The family has been cultivating Xinomavro for generations, and Apostolos Thymiopoulos, after studying oenology, returned to create his own distinct expressions of the variety.
Estate
Since 2003 · First label 'Earth and Sky' in 2005. 'Earth and Sky' is considered a benchmark for the 'modern school of Xinomavro,' with international recognition in countries such as France, the USA, Canada, and Japan.
Vineyards
All vineyards are certified organic and cultivated based on biodynamic principles. They consist of scattered vineyard plots with different altitudes, orientations, and soils; each vineyard is vinified separately to highlight its unique terroir. The wines are produced with indigenous yeasts, without filtration, and with minimal use of sulfites. The winery's range includes Xinomavro in ten different expressions: Rose de Xinomavro, Xinomavro Nature, Earth and Sky, Naoussa Alta, Autorizo, Kayafas, and Vrana Petra.
