Anhydrous Winery (Apostolos Mountrichas)
Intro
Anhydrous Winery is the Santorini venture of the renowned winemaker Apostolos Mountrichas, known from Avantis Estate in Evia. Officially launched in 2021, it focuses on highlighting the fruit and varietal characteristics of Santorini. The name 'Anhydrous' honors the Santorini land that produces grapes without artificial irrigation.
Estate
Anhydrous Winery officially started in 2021 and is located in Fira (Kontochori), Santorini. Apostolos Mountrichas, with over 30 years of experience, is the winemaker. His wines have received international accolades, such as 94/100 in Decanter and 93/100 in Wine & Spirits.
Vineyards
The raw material comes from traditional vineyards of Santorini with ungrafted vines. The soil is volcanic, rich in ash and pumice. The microclimate is dry and warm with sea mist. The varieties cultivated are Assyrtiko, Athiri, Aidani, Mavrotragano, and Mandilaria. Cultivation and harvesting are done manually. The production focuses on premium winemaking with maturation in tanks, amphorae, and traditional 'Afoura' barrels.
Tourism
The Anhydrous Cellar Door offers innovative wine tourism with tours led by oenologists and features a restaurant with creative Greek cuisine. Visits are by appointment, daily from 11:00–22:00 during the summer season. Tours are conducted in Greek and English, and there is disabled access.
