Liatiko
Introduction
Liatiko is a variety closely linked to the history of Crete, particularly in the regions of Heraklion (PDO Dafnes) and Lasithi (PDO Sitia). It is a 'temperamental' variety in cultivation, but when vinified correctly, it offers wines with rare aromatic complexity reminiscent of the great wines of Piedmont or Burgundy.
Tasting Notes
Appearance: Light ruby evolving to garnet. Aromas: Intense notes of ripe red fruits (strawberry, cherry), dried figs, herbs, and a characteristic sense of sweet spices and leather. Palate: Soft, silky tannins, high alcohol, and a 'sweet' sensation even in dry wines.
Gastronomy
Liatiko is ideal for dishes with earthy flavors: Cretan Cuisine: Slow-cooked lamb, roasted meat, or rabbit with rosemary. Mushroom Dishes: Risotto or pasta with wild mushrooms and truffle. Sweets (for the sweet version): Desserts with chocolate, dried fruits, or aged cheeses.
Terroir
Terroir: Heavy limestone soil that aids its very early ripening. Climate: Very hot (ripens in July), but with cool nights due to altitude. Result: Silky tannins and aromas of dried fruits.
