Santo Wines Winery
Intro
The Union of Santorini Cooperatives, now known as Santo Wines, was established in 1911 under the name “Santorini Vine & Wine Protection Fund” to protect the island's viticulturists. Today, it is the largest production unit in Santorini, representing approximately 1,200 members.
Estate
The modern winery was inaugurated in 1992 in the village of Pyrgos, in a unique location on the edge of the caldera with views of the volcano and the Aegean.
Vineyards
The network of members covers approximately 1,200 hectares of vineyards, in dry conditions without irrigation. Mainly indigenous varieties such as Assyrtiko, Aidani, Athiri, and Mavrotragano are cultivated, while other rare varieties are maintained on a pilot basis. There is also a small organic cultivation for research purposes. The range of wines is extensive, with dominant versions of Assyrtiko (white, barrel, sur lie) as well as blends with Aidani and Athiri. Vinsanto, the traditional sweet wine of Santorini, stands out. Reds from Mavrotragano are also produced, along with experimental organic series.
Tourism
The winery in Pyrgos features a Wine Tourism Center open year-round, with tasting rooms offering unlimited views of the caldera. Visitors can participate in organized tours, themed tastings, and food & wine pairings. Wine Enthusiast Magazine has named Santo Wines as one of the top destinations for sunset tastings. The facilities also include the Gravity winery, state-of-the-art tanks, aging cellars, and a Wine & Deli shop with local products such as fava and Santorini tomatoes.
