It was founded in 2015 by oenologist Nikos Karatzas, who, after a successful career in major wineries in the region, decided to create a boutique winery focused on showcasing the richness of Greek varieties through a minimalist approach.

Vineyards
The philosophy of Oenops is based on the concept of high-quality "négociant." Nikos Karatzas collaborates with old vineyards and experienced viticulturists throughout Greece (Drama, Naoussa, Santorini, etc.). In the winery, intervention is kept to a minimum: primarily amphorae, egg-shaped concrete tanks, and large oak barrels are used. Oenops places great emphasis on indigenous varieties, often seeking very old vines that yield low but highly concentrated outputs. At the center are Xinomavro, Assyrtiko, and Vidiano, while the winery has become famous for the revival and promotion of the rare Limniona variety.
Tourism
Visitors have the opportunity to witness a different approach, where impressive rows of amphorae and concrete eggs replace the classic stainless steel tanks. The tasting experience focuses on understanding the different terroirs of Greece through the estate's labels (such as the "Apla" series or the single-varietal "Vidiano" and "Limniona").
